Happy WIAW everyone!!! I seriously can't believe that it's already Wednesday. Although I enjoyed my three day weekend immensely, it has definitely thrown me off beat. So much so that I actually thought today was Tuesday, and I spaced on taking photos, so some of this weeks pictures are recycled (sorry!)

Old Fashioned Oats with Peanut Butter and Turbinado Sugar
This has become my go to breakfast. It's tasty, fast, and super filling. I paired it with a cup of joe and a glass of oj. Normally I don't drink orange juice, but I find it keeps me from completely feeling like death when I get the sniffles.
Lunch:
Quinoa with Bacon, Peas, and Parmesan
Right now you're probably thinking "those don't look like any peas I've ever eaten." You, astute blog reader, are correct. The quinoa pictured here is one featuring spinach, bacon, tomatoes (?), and cheddar cheese. Sorry for the recycled picture, but I think it gives you the general idea. Besides, both are equally tasty. Lunch was prequeled by some carrot and celery sticks, and followed with a baby jazz apple.
Dinner:
Homemade Roasted Tomato Soup with Grilled Cheddar Cheese Sandwich
As a frequent consumer of all things food porn, it is very rare that I get an immediate craving for something I see. Usually I bookmark the recipe and hole it away for a later day. So I guess you could say this soup was love at first sight. I saw it this past Sunday on Sandwich King or some such nonsense, and despite the host's (Jeff Morrow) incredible resemblance to Mighty Mouse, I knew I had to make this soup a.s.a.p. Of course I couldn't leave well enough alone so the soup is modified quite a bit- check out my version of it <<here>>.
As always thanks to Jenn for hosting this wonderful vegetable themed bonanza. All in all I think I did pretty well this WIAW, although there is always room for improvement.

DeleteOld fashioned oats with peanut butter? Sign me up. I put p.b. on just about everything else but for some reason have never paired it with oats!
ReplyDeleteOh me too! I was seeing so many people put various nut butters into their oatmeal on WIAW, so I figured I'd jump on the bandwagon. It really makes your morning oatmeal creamy and filling.
