It's been a pretty busy week for the greenhorn gourmande.  I've been temping at a pretty cool media company (although my actual work is far from glamorous), and I'm finding that I just don't have the same amount of thought or energy to put into my meals.  So this WIAW (brought to you by Tuesday) features meals exclusively made in 30 minutes or less.

Beef Roast Transformed-Rendang Curry

Beef roast is a humble and delicious cut (when treated properly), and yet it has pretty much been relegated to the realm of pot roasts and stroganoufs.  Of course there is nothing wrong with these comforting classics, but what of beef roasts that have bigger dreams?  Dreams of being simmered slowly in a broth of coconut milk and fragrant Indonesian spices.  Well for one lucky beef roast, this dream came true.

Gobble, gobble y'all-Braised Turkey Legs

I'll be honest here.  Before this recipe, I never really thought about buying turkey legs.  Sure I eat turkey on holidays and the occasional turkey sandwich, but beyond that I'd have to say I had a pretty turkey free diet.


I happened across these gams one day in Wholefoods for the criminally low price of $.89 a pound.  They looked good, so I figured why not?


This was possibly one of the happiest accidents I've ever had.  These legs were delicious, and the sauce produced was just gorgeous.  So rich, complex, and velvety smooth.  Seriously though, this recipe is definitely one of the best I've ever made.  So the next time you're cruising the poultry section at your local grocer, take a break from chicken and give these over sized drumsticks a try.

Meyer Lemon Muffins

Meyer Lemons

Your eyes do not deceive you, those lemons are in fact orange in color.  These are of course no ordinary lemons.  They are Meyer lemons, a cross between a lemon and a mandarin orange.  Although shaped like lemons, they are far less acidic, and almost sweet in taste.  


I first heard of them one year ago, when Meyer lemon curd recipes had spread like wild fire across foodgawker.  My curiosity was piqued, and I'm proud to say that it has now been satisfied.




This my friends is a Meyer Lemon Muffin.  A moist and delicately sweet muffin with the aroma and flavor of the lemon-orange love child.  Amazing.  Recipe after the jump.

Heaven in a Jar- Homemade Pickled Jalapenos

So I have a confession to make... I love pickled jalapenos.  Not in a casual "oh yeah, this is one of my favorite condiments" kind of way, but rather the shameful "I eat these straight from the jar when no one is looking" kind of way.  Seriously. 





 My love for these pickled peppers started at a very early age.  I was two or so in my dad's arms when I spotted them in the fridge.  Apparently I made quite a fuss and finally my poor father relented, and luckily for me (and dear daddums), I was quite taken with them.  Since then I have finished many a jar, all of them store bought.  That is until now.

Baked Eggs in Baguette- Brunch on a Lazy Saturday

Don't you just love weekends?  I've had a rather slow start to mine.  I woke up this morning at around ten (whoops!) to a winter wonderland.  It snowed!  For the first time since October!  As beautiful as it made the view from my balcony, it also made the prospect of grocery shopping completely undesirable.  (Really though it is quite a harrowing experience on the best of days.  Grocery shopping via subway is really a pain.)

So I made the smart decision to procrastinate, and instead of shopping I whipped up this:

WIAW 12-I can has lentilz?!?!

Sadly, my cat doesn't actually eat lentils.  Even more sadly, my cat isn't really mine anymore (she lives with my mom *sad face*).

Get Your Drink On- Lemon-Thyme Simple Syrup and Whiskey "Sours"

Dear lushes of the internets,


  It's Friday.  Do you know what that means?  It's time to loosen our ties and booze it up.  Because I am such a kind hearted and generous individual, I would like to help in your efforts to get all blotto.  This whiskey based drink is light and sweet, but not cloyingly so.  The thyme really makes this- so I strongly encourage you to invest the 30 minutes it takes to make the simple syrup. 



Lemon-Thyme Simple Syrup

Ingredients

1 cup water
1 cup sugar
l/4 cup lemon juice
1 tbsp lemon zest (about a 1/2 a lemons worth)
1 tsp dried thyme

Directions

1.  Combine all ingredients in a small sauce pan.  Bring to a boil while occasionally stirring.  Remove from heat and let cool.  Strain through a fine metal sieve or cheese cloth.




Whiskey "Sours"

*Note:  This drink is a loose interpretation of a whiskey sour.  A delicious, delicious interpretation.



Ingredients

2 ounces whiskey (Canadian Club FOREVER!!!)
1 ounce lemon-thyme simple syrup
1 maraschino cherry (not optional!  Ok maybe.)
club soda to taste
ICE


Directions
1.  In your serving glass pour the whiskey, simple syrup, and cherry.  Add ice and top with however much soda you like.
2.  Rinse and repeat.

This is a seriously simple cocktail.  Really good for the poor sots such as myself who can't afford to have more than one kind of liquor at a time.  Seriously though, I just declined going out for 2 for $5 beers because I'm too broke #firstworldproblems.  Also, for those of you who aren't good at math,  this recipe is a simple 2 to 1 ratio.  So you could easily make larger batches of this (i.e 2 cups whiskey to 1 cup simple syrup).

Indian Red Lentil and Chickpea Stew

In today's WIAW post I mentioned that I would post a recipe of my lunch:




While the photo may not be awe inspiring, I assure you this recipe is worthy of your admiration and appetite.  It's a spicy, flavorful, and a bright way to shake off your January blues.

It was created from an amalgamation of various Indian recipes I have tried over the past couple of months.  I actually made a dish similar to this one lazy afternoon, but stupidly failed to write down my creation.  This time I made sure not to make the same mistake and took meticulous notes.

Ingredients

1 med yellow onion, diced medium
1 jalapeno, diced small (seeded if you like)
1 tbsp ginger, grated or minced
2 cloves of garlic, minced
1 tbsp canola oil
1 14.5 ounce can diced tomatoes
2.5 cups chicken stock (or vegetable stock)
1 cup red lentils
1-2 cups cooked chickpeas 
1/2 tsp garam masala
1/2 tsp madras curry powder
1/4 tsp turmeric
1/8 tsp cayenne
salt to taste ( I used about 1 tsp)

Directions

1.  In a large sauce pan or deep frying pan heat up the canola oil over medium heat.  Add the onion and allow to soften slightly, then add the jalapeno and ginger.  Cook a few more minutes, until onions are soft, and add the garlic and cook an additional minute.

2.  Next add the tomatoes and their juices.  Allow the tomatoes to cook for about 5 minutes until they have released more of their juices.  Now add the chicken stock, lentils, spices, and 1/2 tsp of salt.  Bring to a boil, and then reduce to a simmer and let cook 15-20 minutes until lentils are almost done. 

3. Add the chickpeas and simmer an additional 5-10 minutes until lentils reach desired consistency.  Salt to taste.

I served mine with brown basmati rice; it's slightly springy texture was a nice contrast to the soft lentils and chickpeas.  If you've only ever had short grain brown rice, I insist that you try one of it's long grain cousins.  I find that it is less nutty and chewy, and they're an overall more relatable replacement for white rice.

Thai Chicken Noodle Soup- Crazy Cooking Challenge!

Hello everyone!!!  Welcome to my first Crazy Cooking Challenge hosted by Tina at mom's crazy cooking.

This month's challenge was chicken noodle soup.  While a very appropriate choice for January, I must admit I was a little dissapointed.  To be quite honest I find chicken noodle soup to be a bit boring.   That is until I found this recipe at inquiring chef.  Thai chicken noodle soup!  Now that's something I can get behind.  I absolutely adore the spicy, complex flavors of Thai food, both of which are found in this dish.

This year I've hit the ground running, and I'm already making headway into my resolutions blogolutions.  This year I'm going to try and post more frequently (posted yesterday ), and really tighten up the focus of my blog.  I've also already added a recipes page!!! Check <<it>> out!  I'm amazed at how many recipes I've managed to post in the three months since I've started writing this blog.


Alright, enough blatant self promotion.  Let's get on with the eats!

First Post of the New Year- Baked Artichoke Dip!

Happy New Year Everyone!  I hope you all had a wonderful New Year's Eve.

I certainly did.  I spent the evening at home with my beau, some neighbors, delicious appetizers, and copious amounts of cheap sparkling wine.

While the wine left something to be desired, the company and the food (provided by yours truly) did not disappoint.

The star of the show was undoubtedly the Baked Artichoke Dip with Bacon and Goat Cheese.






It was eagerly eaten by all slathered on toasted baguette, which of course had received a brush of bacon grease and a sprinkle of salt.  Delicious!  Seriously, this dip is so good, and I don't even really like artichoke dip.

 Random side note, I actually kind of hate the phrase "and I don't even really like... " I mean really, how does my initial dislike for a certain food convey how tasty this version of it is?  I mean what if the previous versions I had were simply subpar?  Also, since you have no idea what my tastes are, how does my previous dislike for something clarify why this recipe is so tasty?

Anyway, I digress.  This dip is fanfuckingtastic, and you should make it immediately.  To share with your friends... or your cat... or by yourself in the bathtub.
