What I ate Wednesday XIV- Delicious eats on the double!

It's been a pretty busy week for the greenhorn gourmande.  I've been temping at a pretty cool media company (although my actual work is far from glamorous), and I'm finding that I just don't have the same amount of thought or energy to put into my meals.  So this WIAW (brought to you by Tuesday) features meals exclusively made in 30 minutes or less.


Breakfast:

Greek yogurt with honey and sunflower seeds.   A small coffee.

I absolutely adore Greek yogurt (2% all the way!), and when topped with seeds and a drizzle of honey it makes an unbeatable speedy way to start the day.  Also, coffee.  Always coffee.



Lunch:

Quinoa with roasted buttercup squash, spinach, bacon, and blue cheese.  So unbelievably tasty.

Okay, so technically this meal took longer than thirty minutes.  I roasted the squash the night before I made this for dinner which cut out about 40mins of the cooking time.  However, since I had the leftovers for lunch, which were zapped in the good ol' microwave for about two minutes, I think it all evens out.  Seriously though, the combination of these ingredients made for such a deliciously balanced quinoa salad.  The squash and the cheese really work well together, and the bacon adds a salty chewy/crispy pop every now and again.


Dinner:

Whole wheat spaghetti with a mushroom and thyme sauce.

This was surprisingly good.  Not that I thought it was going to be bad, but this simple impromptu dish really blew me (and my boyfriend) out of the water.  The sauce was extremely deep and complex, especially considering it has only five ingredients.  The beurre manié made the sauce come out velvety smooth, clinging to the noodles with much aplomb.   Recipe coming soon, I swear!

  1. Great looking food! I have to try your quinoa, it sounds much tastier than the plain stuff I usually make.

  2. Mmm, your quinoa salad looks great - I love anything with blue cheese added to it! I really should bust out the quinoa more often...it tends to get forgotten in my pantry sometimes, since the bf doesn't love it :(

  3. ooooh all of this looks great - especially the sunflower seeds (i need some!) and that mushroom pasta. i think i'm totally craving pasta right at this moment now....too bad i'm at work. :(
